My 3 apples trees gifted my with 500 pounds of imperfect fruit. I have doing my best to preserve and use some it fresh. Several takes on pies, slices canned, apple butter, apple sauce( a big hit with the 16 month old great grandson). Do you have any fresh apple suggestions? I have about 40 pounds left. GG nipote licks the apple butter off his toast. Forget the toast.

Hi Susan, I checked many books and asked my mom and aunt, both of whom are experts in fruit and ingredient storage, and, unfortunately, I have to tell you that I don't know what to suggest to you. The traditional way, at home, is to keep them in a box, in a fresh but not too cold room like a home cellar, where they will stay excellently for a few weeks, even one/two month. Un abbraccio, xo. When in doubt, ask Mamma. I moved two boxes of apples into the unused guest room without heat. I check every few days to cull out bad apples. Made more apple sauce. I am thinking about making apple hand pies. Grazie Monica.

Mamma is always a good idea! Yesterday evening she wrote me a message saying you could also freeze your apple jam (or one or two small cooked apple pies). Buona cucina, Monica

Yesterday I made an apple cake topped with sliced almonds. Delish! Raves! It's probably close to a German apple cake or a French one. Only used two apples, however.

This rainy day I am trying to talk myself into making more apple sauce. I'd rather make almond cookies for Chinese New Year. Maybe I'll just read instead.
